2015 Castle Red
Our 2015 Castle Red consists of 40% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot, 10% Petit Verdot, 5% Malbec and 5% Syrah. The fruit originated from 65% Columbia Valley and 35% Walla Walla AVA’s. Aromas of dark cherry, Chocolate, Vanilla, coffee, mint, turmeric, pine forests and fresh oregano abound on the nose. The palate is soft and textured with rich, velvety tannins. A perfect wine to drink young; it will pair well with grilled meats, cheeses and rich Italian sauces.

WINE MAKING NOTES
Harvest Date: September 18 to October 15, 2015
Brix: 23.5 to 23.8
Yeast: BCS103 Saccharomyces cerevisiae/Saccharomyces bayanus hybrid that is known for clean fermentations that respect varietal character.
Fermentation: Fermentation occurred in small vats with punch downs occurring twice daily until the desired extraction was achieved. The fermentation was completed in 100% new French oak barrels and malolactic fermentation ensued. The barrels were racked every six months and the wine was topped every month with the best wine in house. Careful blending of wine lots from Walla Walla AVA and Claar Estate Vineyards provides a wine with richness and character that resembles that of the highest quality wines from Washington State.
